The Review
Inside Reading Terminal Market, which is itself one of the great food halls in America, DiNic's occupies a corner booth and has done so since 1918. The line is always long. The sandwich is worth it.
Philadelphia's great debate is cheesesteak vs. roast pork Italian, and DiNic's has become the standard-bearer for the latter. The pork loin is slow-roasted until it carves into thin, tender slices that are then piled onto a Amoroso roll and finished with sharp provolone and broccoli rabe that has been cooked with garlic and olive oil until slightly bitter. The bitterness of the rabe against the rich pork and sharp cheese is one of the definitive flavor combinations in American sandwich history.
This sandwich won The Food Network's competition for the best sandwich in America in 2012. It was not the wrong call.
What to Order
Roast pork Italian with sharp provolone and broccoli rabe. Do not substitute spinach for the rabe — spinach is a different sandwich with a different flavor profile and you will be disappointed.
Tips
The market is cash-friendly. Arrive before 11am or after 1:30pm. The pork sells out — if they're running low, they'll tell you; have a backup plan. Reading Terminal Market is itself worth an afternoon.
