Why Sandwiches Taste Better When Someone Else Makes Them

You've noticed this. The sandwich you make yourself from the same ingredients that someone else uses — a deli, a friend, a parent — tastes different. Theirs is better. This is not modesty. This is psychology backed by actual research.

The phenomenon runs on two tracks. The first is the Ikea Effect — the cognitive bias where we overvalue things we've assembled ourselves. In most product categories, this makes us like our own work more than an equivalent product made by others. But with food, the Ikea Effect is complicated by a second mechanism: satiation through sensory exposure.

When you make your own sandwich, you are exposed to the smell of every ingredient as you handle it. Your brain begins processing the pleasure of those ingredients before you've taken a bite. By the time the sandwich is assembled, you've already mentally consumed some of the experience. The first bite is therefore less novel, less surprising, and slightly less satisfying than if someone else had done the work.

A study from Harvard Business School found that people who assembled their own food rated it as more valuable (consistent with the Ikea Effect), but reported eating it with less attention and enjoyment than identical food assembled for them. The act of making reduces the act of experiencing.

There's also a preparation anxiety factor. When you make your own sandwich, you're aware of every decision — too much mayo, the tomato is too thick, the bread isn't quite toasted enough. This awareness carries into the eating. When someone else makes it, you receive it as a completed object and evaluate it as such.

This is why deli sandwiches taste better than home sandwiches even when your home ingredients are superior.

The solution is to make sandwiches for other people and have them make them for you. It's also just more enjoyable.
