X-Tudo
● BrazilThe X-Tudo (pronounced 'cheese-tudo', with X substituting for 'ch' sounds in Brazilian Portuguese) evolved from the American hamburger imported to Brazil in the 20th century. Brazilian lanchonetes (casual diners) progressively added more toppings until the X-Tudo emerged — a sandwich that can weigh over 800 grams and contains a dozen ingredients.
The X-Tudo is simultaneously a joke and the most Brazilian thing imaginable — the country's tendency toward excess and generosity expressed in sandwich form. It is the specialty of the lanchonete, Brazil's most common food establishment. No two X-Tudos are identical. The name literally means 'cheese everything.'
Grill a beef smash patty. Fry a slice of ham, strips of bacon, and a fried egg simultaneously. Toast a large hamburger bun. Layer: mayonnaise, lettuce, tomato, the beef patty, sliced cheddar or requeijão (Brazilian cream cheese), ham, bacon, egg, canned corn, canned peas, and potato sticks (Palha). Spread more mayo on the top bun. Press together.
