Origin Story
The full Irish breakfast has been a fixture of Irish hospitality since the 19th century. The 'breakfast roll' — all the components of the full Irish assembled in a bread roll — became a national institution in the 1990s and 2000s, particularly during the Celtic Tiger boom when construction workers carried them from petrol stations to building sites across the country.
Cultural Context
The breakfast roll achieved a near-mythological status in Ireland in the 2000s — it was the symbol of economic growth, of workers with money in their pockets, of a changed Ireland. The comedian Pat Shortt recorded a song called 'The Breakfast Roll Man' in 2006. When the economy crashed in 2008, the breakfast roll became freighted with meaning about excess and loss.
Recipe
Fry back bacon, sliced black pudding, and sliced white pudding on a hot griddle until crisp on the edges. Fry or scramble 2 eggs. Warm a large floury bap or a section of baguette. Layer the bacon, puddings, and egg. Add butter if desired. Ketchup or brown sauce is the canonical condiment.
