Origin Story

Southern fried chicken has been a staple of African American cooking since before the Civil War. The fried chicken sandwich crystallised as a distinct American phenomenon in the 1970s and 1980s, reaching global consciousness with the Chick-fil-A chicken sandwich. The 2019 'chicken sandwich wars' between fast food chains turned it into a cultural flashpoint.

Cultural Context

Few foods have generated more viral discourse than the fried chicken sandwich. Popeyes' 2019 launch caused lines around the block and a national media frenzy. The sandwich now exists at every price point from $1.50 drive-through to $28 restaurant versions with house-made pickles. It is the defining American sandwich of the 2020s.

Recipe

Marinate chicken thighs in buttermilk, hot sauce, salt, and garlic overnight. Dredge in seasoned flour (paprika, cayenne, garlic powder, black pepper), double-dip in buttermilk and flour, then fry at 175°C for 12–14 minutes. Rest on a rack, place on a toasted brioche bun with bread and butter pickles and spiced mayonnaise.
