Origin Story
Suya is the iconic Nigerian spiced grilled meat, originally made with beef by the Hausa people of northern Nigeria. The suya spice blend (ground peanuts, ginger, paprika, garlic, and other spices) is ancient and was carried across Nigeria by Hausa traders. The suya roll — suya meat in a bread roll — is a Lagos adaptation that makes this street meat portable.

Suya is arguably Nigeria's most recognisable food export. The suya spot — a roadside grill operation that sets up at dusk and runs until midnight — is a fixture of Nigerian urban life. The combination of the smoky, spiced meat with the raw onion and tomato garnish is precisely calibrated. The roll adaptation serves the lunch crowd rather than the evening crowd.
Recipe
Marinate sliced chicken thighs in yaji spice (ground peanuts, ginger, paprika, cayenne, garlic, crayfish powder, salt). Thread on skewers and grill over charcoal or high heat, turning frequently. Slice off the skewers. Split a soft roll, fill with the suya chicken, sliced raw onions, sliced tomatoes, and extra yaji powder. Add pepper sauce.
